There are two versions of this Friday night tea classic, the Daisy version and the grown-ups version.

The first one is the Daisy version which is quite basic but tasty

Ingredients.

5 chicken wings per person is a meal sized portion.

Cut the wing at the joint making 10 pieces of wing.

Olive oil

Salt

Pepper

Runny Honey

 

Method for Daisy version.

Preheat the oven to 180/350 gas mark 4

Cut the wing at the joint and place all the pieces in a mixing bowl.

Add a tablespoon of oil to the wings.

Now add the salt and the pepper. I use ground white pepper for this recipe.

stir the wings around with the hand to ensure all the wings are coated evenly.

Place the wings onto the wire rack of the grill tray and [lace in the oven for 35 minutes.

When they look ready put them back into the now clean bowl. Pour a thin trickle of honey onto the hot wings and ensure all are coated. You don’t want too much as it may burn, just enough to make them sticky.

Place then back into the tray but on the bottom of the tray not on the wire. Line the bottom of the tray with damp greaseproof paper.

Put them back in the oven for the last 10 minutes.

Serve with boiled rice, that’s how Daisy rolls.

Adult version.

7 or 8 wings per adult. Each wing cut in half at the joint.

Chinese 5 spice powder

Olive oil

Garlic granules.

Cayenne Pepper or Smoked paprika.

1/2 teaspoon of dried chili flakes.

Salt

White pepper

Runny Honey

Sesame seeds

Sesame Oil

Method for the adult version.

Put the olive oil, 5 spice powder, cayenne, chili flakes, garlic granules, pepper and salt in a large mixing bowl. Mix together until a paste forms. If you struggle to achieve a past then add more oil a drop at a time.

When happy with the paste cut the wings at the joint and add into the large mixing bowl.

Massage the wing pieces with paste, ensure all the are coated properly. Leave for around 30 mins to an hour to soak the marinade up.

Place the wings onto the wire tray in the grill pan and place them in the preheated oven.

As with the Daisy version I take the wings out after 35 minutes. Put back in the bowl and sprinkle to runny honey onto the wings and stir around to ensure all are coated.

Once this is done then put the wings back in the oven but on the tray, not the wire. Line the bottom with damp greaseproof paper. Leave for a further 10 minutes.

When happy that they are cooked then remove and put back into the cleaned large bowl. Sprinkle the sesame oil and the seeds onto the wings and serve with either eggy rice or simple boiled rice.

Nothing complicated but tasty.
