Don’t be put off by the word stew, this takes approx 25-30 minutes so is ideal for that mid-week meal that doesn’t take long, tastes great and doesn’t come out of the microwave. You don’t even need to peel the potatoes, I mean come on how easy is this!! If you don’t try this one then you are missing out.
Ingredients required are:
500g of white potatoes. No need to peel as promised.
300g of boneless, skinless chicken thighs.
2 tablespoon of seasoned plain flour.
1 large white onion.
130g button or closed cup mushrooms.
200ml of red wine. Nightmare, you’ll have to drink the rest with the meal…unless it’s a school night.
75g of grated Mozzarella cheese or mild cheddar.
Butter
Cream or milk.
The optional herb is chives.
Method:
Bring a medium-sized pan to the boil and season with salt generously.
Chop the potatoes into 1-inch square pieces. Once chopped then add to the boiling water and cook for approx 15 minutes.
Chop the chicken into bite-sized pieces and coat in the seasoned flour. Make sure it is properly coated. This will thicken the sauce later and cook out any floury taste in the dish.
Heat a frying pan and add a drizzle of vegetable oil and cook off the chicken pieces. Once the chicken is no longer then add the onions and cook them off too. If the flour is starting to catch then add the red wine. This is usually after only 3-4 mins over medium heat.
Then add the mushrooms and cook until the mushrooms have softened.
if this is too thick then add a splash of water to the chicken and stir until nicely cooked off.
Drain the potatoes and add them back into the pan you cooked them in. Add the grated cheese, a generous knob of butter and a splash of milk or if payday then single cream. Mash the potato mix and season with salt and pepper. If you have them to hand then thinly slice up the chives and stir them through the mash. Not looking for baby food puree, a few lumps will add texture and …character.
To serve, half the mash between the two bowls and then add the chicken mixture on the side. This is comfort food at its very best.
